LET’S DO THE TIME WARP Photographer Stephen Wilkes plays with time itelf in his Day to Night series, capturing an entire day in a single, audacious image. Perched in a crane for 10–30 hours (an assistant hoists food and water), he takes up to 2,000 pictures – later whittled down to 50 shots that are spliced into a single, seamless image. For the sharp of eye, the end results are packed with tiny, telling details, from a guy getting arrested to a couple kissing by the Seine. At the Sacré-Coeur [above], everyone was taking selfies. The Edit Getting handsy Ads photographer Oli Kellett became intrigued by hand models after seeing one backstage at a shoot. ‘She was casually reading a paperback, wearing these huge black gloves.’ (For hand models, a papercut’s nothing short of cataclysmic.) Now he and creative partner Alex Holder have produced a book on the subject, featuring portraits of 24 of London’s finest hand models, Hand Jobs: Life as a Hand Model. No prizes for spotting the innuendo. It’s a sweetly offbeat introduction to a normally hidden world and the owners of some super-shapely mitts, from rugged Paul (specialty: ‘handshakes and power tools’) to elegant Nina, a favourite for diamond shoots and hand-double for Kate Moss. ‘When the models look at ads, they can tell whose hands they are,’ says Oli, who’s now also slightly fixated. Not that his own hands, alas, come close to making the grade. ‘I’ve bitten my nails since I was five; my hands are the absolute worst.’

Un jour, le photographe publicitaire Oli Kellett a aperçu un modèle mains lors d’une séance photographique. « Elle lisait un livre en le tenant avec d’énormes gants noirs. » En effet, la moindre coupure aurait été un désastre. Aujourd’hui, avec son associé créatif Alex Holder, il présente un livre avec des portraits de 24 des meilleurs modèles mains de Londres, Hand Jobs : Life as a Hand Model (Paluchages, la vie des modèles mains ; oui, il y a un double sens). Cet ouvrage sympathique et excentrique présente un monde très confidentiel et les propriétaires de quelques ravissantes menottes, du costaud Paul (« poignées de main et bricolage ») à l’élégante Nina, plébiscitée pour les diamants et doublure main de Kate Moss. « Ils se reconnaissent entre eux dans les publicités », dit Oli, devenu aficionado. EMILY LOIZEAU Crazy Beautiful MARIE-NOËLLE BAUER

There’s an otherworldly quality to Franco-British singer Emily Loizeau, but lately she’s been getting very real. The 41-year-old admits she initially hesitated to reveal the family drama behind her new album – her mother’s fatal struggle with psychosis – but opted to break the taboo surrounding mental illness. Far from being a downer, her Mona is a weird, fiercely funny and ultimately joyful affair.

Emily Loizeau, semble venir d’un autre monde, mais elle est en prise sur la réalité. À 41 ans, la chanteuse franco-britannique dit avoir eu du mal à révéler le drame familial qui sous-tend son dernier album – la bataille perdue de sa mère contre la psychose. Elle a toutefois choisi de parler pour briser le tabou sur les maladies mentales. Loin d’être déprimant, Mona est plutôt joyeux et affiche un humour féroce.

Mona started out as a play. Is there a trend for contemporary French musicians embracing other mediums, rather than just churning out albums and touring? I don’t think it’s a trend, but a new system emerging as a result of the music industry crisis. I think that it’s very positive to explore new ways of doing things and be less obsessed with numbers. Is my single radio playlisted? How many records have I sold? All of that stuff is so boring, sterile and useless!

Au départ, Mona est une pièce de théâtre. Est-ce une mode des musiciens français contemporains d’utiliser d’autres médiums, en plus des albums et tournées ? Je ne pense pas que ce soit une mode, mais un nouveau système qui naît des cendres de la crise du disque. Et je trouve ça très positif d’explorer de nouvelles voies en étant moins obsédée par les chiffres. Est-ce que je suis un single radio ? Combien j’ai vendu de disques ? C’est ennuyeux, stérile et sans intérêt !

In light of your personal experience, do you have any truck with the cliché that artists have a license to be nuts? No, I lived with a mum who was fucked up, and I’m sorry, it was anything but romantic, and she was an amazing artist. Genuinely being an artist – and actually it was my mum who taught me this – means you’re a craftsman. It requires an amazing degree of humility that keeps you firmly ensconced in life, and connected to others. This fetishisation of madness makes me sick.

À la lumière de votre propre expérience, croyez-vous au vieux cliché selon lequel un artiste doit être un peu fou ? Pas du tout, j’ai eu une mère déjantée et, croyez-moi, cela n’avait rien de romantique, même si elle était une artiste incroyable. Cela exige donc d’avoir une grande humilité qui fait qu’on est fermement lié à la vie et qu’on établit un rapport avec l’autre. Le culte de la folie, ça me donne envie de vomir.

Talk to me about joy. Despite everything, there’s a palpable sense of it when I’m sitting here talking to you now, and it pervades Mona too. Both the album and the play endlessly seek joy and light. I set out to create something that would make you both cry and laugh. For years, my mother’s illness just ate at me, and at some point you definitely have to transform these abscesses into something that yields life. You’re creating order and cleansing things. It’s the very premise of the blues after all: taking all your sadness, your hurt and turning it into something transcendent. She plays La Cigale in Paris on 10 November; emilyloizeau.com

Parlez-moi de la joie… car, malgré tout, c’est un élément qui est palpable quand on écoute cet album et quand on vous rencontre face à face. Mona tend sans aucun doute vers la joie et la lumière – c’était effectivement mon intention. Pendant des années, la maladie de ma maman a rongé mon être et, à un moment donné, il faut savoir transformer ces abcès en quelque chose qui donne de la vie, qui soit positif. Je vois en cet album un moyen de rétablir de l’ordre et de me purifier. C’est l’essence même du blues d’ailleurs : avec toute cette peine et cette tristesse, on produit quelque chose de transcendant. Il n’est pas toujours aisé de découvrir le vrai Paris et ses citoyens. Il faut dire que les Parisiens ont une certaine réputation (Scarlett Johansson, par exemple, les a trouvés « très grossiers ») et sont peu enclins à vous convier chez eux. Dans Les Parisiens chez eux : l’art de vivre à Paris, l’auteure Anne de Chalvron et la photographe Bertille Chéret ont voulu prouver le contraire en se faisant inviter chez 19 résidents. Leur but ? Voir comment ils vivent et ce que signifie vraiment être parisien. Leurs hôtes ont été choisis pour leur diversité, d’un sculpteur et architecte vivant sur un bateau, à une jeune famille de Belleville, en passant par un étudiant chanceux, installé dans un loft avec vue sur la tour Eiffel. Les conversations décontractées et les photos intimistes de leurs intérieurs et de leurs lieux favoris suggèrent que loin d’êtres impolis, les Parisiens sont, en fait, mal compris. « Le Parisien est à l’image de la ville, qui a mille et une facettes », dit l’architecte d’intérieur Oscar dans son vieil appartement captivant, au chic Trocadéro, près de la tour Eiffel. Il regorge d’antiquités, choisies avec esprit et intelligence, sur lesquelles règne un buste rose fluo de MarieAntoinette. Mais le plus beau est sans doute le petit jardin caché. Grincheux, les Parisiens ? « Certainement, moi-même je le suis, admet-il. Mais nous cachons une grande émotivité. J’adore ma ville et je revendique ce que nous sommes. » Paris n’est pas qu’architecture haussmannienne et cafés de cartes postales. Elle compte aussi des voisinages plus bruts comme Barbès, où Michael occupe un atelier d’artiste rénové, au chic industriel. Sa quête d’authenticité l’a poussé à quitter le pittoresque Quartier Latin pour le nord où il se sent plus proche de l’esprit de la ville. « Ici, il y a le brouhaha des vendeurs à la sauvette, les embouteillages. On est dans la ville. » Nous rencontrons aussi Melissa, une ex-New-yorkaise, coach personnelle. Comme bien des amoureux de Paris, elle est venue pour une escapade de trois

Getting under the skin of Paris – and its denizens – isn’t always easy. Parisians, it must be said, do have a certain reputation (Scarlett Johansson, for one, pronounced them ‘terribly rude’), and are famously reluctant to invite outsiders into their homes. In Les Parisiens chez eux (Parisians at Home), writer Anne de Chalvron and photographer Bertille Chéret set out to prove otherwise, dropping in on 19 locals across the city’s different arrondissements. Their hosts were a deliberately varied bunch, from a sculptor and architect living on a boat to a young family in Belleville, and a lucky student ensconced in a loft with a view of the Eiffel Tower. The relaxed chats and intimate pictures of their homes and local haunts suggest that Parisians aren’t rude, they’re just misunderstood. ‘The Parisian is like the city itself, which has a thousand facets,’ says interior designer Oscar, whose

beguiling old apartment is in smart Trocadéro, near the Eiffel Tower. It’s full of antique fi nds, curated with real verve and wit and overseen by a neon-pink bust of Marie-Antoinette. Best of all, though, is his tiny, cherished hidden garden. Are Parisians grumpy? ‘No doubt about that! I certainly am,’ he admits. ‘But we hide great emotion. I love my city and defend who we are.’ Nor is Paris all Haussmann architecture and picture-perfect, café-lined streets. It’s also home to more unpolished neighbourhoods such as Barbès, where Michael lives in a renovated, industrial-chic artist’s workshop. His search for authenticity drove him away from the scenic Latin Quarter, and northwards to where he feels closer to the spirit of the city.

‘There are street vendors, traffic jams and you’re immersed in urban life,’ he says. We also meet life coach Melissa, a former New Yorker. Like so many of Paris’ champions, she came to the city for a Hemingway-esque threemonth escape, and somehow ended up staying. Her modest but charming Canal Saint-Martin apartment is covered with prints and paintings, and, ten years down the line, she knows everyone in the neighbourhood. ‘Unlike Americans, the French take a long time to get to know each other,’ she says. ‘Sometimes they have a slightly negative outlook, but once you’ve made a friend, it’s a strong and beautiful thing.’ Les Parisiens chez eux : L’Art de vivre à Paris is published by Editions de la Martinière, €25

Cet hôtel classique inspira à Fleming le fameux « au shaker, pas à la cuillère » d’après une légende confirmée par la longue et réjouissante carte de martinis dry. James Bond girls et boys avisés dégustent une cuisine britannique revisitée au Thirty-Six et puis rechargent les batteries en toute élégance dans une des chambres sans chichis, avant de partir faire la chasse aux méchants.

Parlons franc : le XIIIe ne sera jamais l’arrondissement favori de personne. Mais cet adorable refuge bohème compense l’adresse un peu bof-bof. It’s 9.15am and we’ve just arrived at the market in Arles, one of the biggest in Provence. The heady fragrance of olives mingles with the scent of Algerian briouates au fromage (cheese-fi lled pastries), while Basquestyle chicken simmers away in a big pan. Too early for all that? Not for the stallholders, who’ve been here since 6am. Our guide to the market’s finest producers is Laura Vidal, co-founder of globetrotting eaterie the Paris Pop-Up. Over the past few years it’s travelled the world, from California to Kyoto: having sojourned in Arles last summer, it’s now returned for an unprecedented second season. What’s drawn them back? ‘Life’s good here,’ smiles Laura’s partner, chef Harry Cummins, gesturing at the stalls. He’s already started shopping, and is carrying a capacious tote – given to him a moment ago by Christian Lacroix’s wife.

Déjà les effluves d’un poulet basquaise mijotant dans une grande poêle montent au nez, le parfum capiteux des olives rencontre celui des briouates algériens au fromage. Trop tôt ? Pas pour les forains, installés là depuis 6 heures. Dans notre quête aux meilleurs producteurs, notre guide est Laura Vidal, la cofondratice du resto itinérant Paris Pop-Up. Ces dernières années, il a parcouru le monde, de la Californie à Tokyo. De séjour à Arles l’an dernier, il est de retour pour une deuxième saison. La raison de ce retour ? « On est bien à Arles, répond le souriant chef Harry Cummins, le partenaire de Laura, en montrant les stands. Il a déjà commencé ses emplettes et porte un grand cabas blanc – que lui a donné l’épouse de Christian Lacroix, il y a quelques instants.

‘She saw me struggling along, laden with shopping, and came to my rescue!’ Weaving through the market, Harry and Laura seem to know everyone – a restaurateur friend here, a loyal regular there. ‘It’s just one of the advantages of living in a village,’ shrugs Harry. Our fi rst stop is the stall run by Raitetsu, a Japanese market gardener based between Arles and Nîmes. A dozen vegetables and herbs are set out, labelled in French and Japanese, some with little watercolour illustrations. ‘There might not be much – he’s a one-man band – but everything he sells is amazing,’ says

Harry. ‘He grows the best broad beans and carrots I’ve ever tasted.’ Raitetsu doesn’t need to shout to attract his clientele, quietly explaining to intrigued customers what kyuri (Japanese cucumber) is, and selling bundles of fragrant, purple-leafed herb shiso to his regulars. Next up it’s Sandrine and Yannick Perez, whose stall is decked with courgette flowers, garlic and fruit. ‘They grow almost everything themselves, and track down the rest from other local producers. Sandrine often sends me photos on Facebook of what she’s harvested or picked up, so I can choose what I’d like.’ From fruit and veg, we move on to Eric the fi shmonger. ‘Looking good today!’ jokes Laura. ‘Ready for the photographs?’ With its cornucopia of fish and seafood, his stall speaks for itself, while the line-caught sea bass has caught Harry’s eye. ‘I bought the lot last year. It’s an expensive fish, so I challenged myself to use every piece, from bones for broth to grilling the heads and serving the belly raw.’ At the cheesemonger’s, three-deep in customers, Harry and Laura restock on some local tomme de chèvre before heading back to Pop-Up hq, the Hôtel Nord-Pinus, to prepare for the fi rst sitting of the day: Raitetsu’s vegetables, served as crudités and spiced up

YANNICK, MARAÎCHER ‘My parents were market gardeners, so I followed in their footsteps. What am I most passionate about? I love talking about my tomatoes; I grow 20 different varieties. If you had to taste just one, I’d go for the zebrino. It’s a firm, chocolate-coloured tomato with red and green streaks, and it’s incredibly sweet. A real delight.’ / « J’ai repris l’exploitation maraîchère de mes parents. Ce qui me passionne le plus ? Parler de mes tomates anciennes. J’en cultive une vingtaine de variétés différentes. Si vous ne deviez en goûter qu’une, ce serait la Zebrino. Ferme, de couleur chocolatée, zébrée de rouge et de vert et… sucrée, surtout. Un délice ! » WHAT TO BUY Gooseberries, nice courgettes (which have very few seeds), and peaches. QUE CHOISIR ? Les groseilles à maquereaux, les courgettes de Nice, qui ont très peu de graines, et les pêches.

M’ayant vu bien embarrassé avec tous mes achats elle s’est portée à mon secours ! » Filant entre les étals Harry et Laura semblent connaitre tout le monde. Là, ils saluent un ami restaurateur, ici, une cliente fidèle. C’est l’un des avantages d’habiter dans un village ! Premier arrêt, chez Raitetsu, maraîcher japonais installé entre Arles et Nîmes. Une dizaine de légumes et herbes japonaises sont étiquetés en français et en japonais, parfois avec une illustration à l’aquarelle. « Il a peu de choses mais tout ce qu’il vend est incroyable ! Il travaille seul, ne fait que du bio et produit les meilleures fèves et carottes que j’aie jamais goûtées », dit Harry. Raitetsu n’a pas besoin de s’époumoner pour attirer du monde. Il explique aux clients intrigués ce qu’est le kiyeali (un concombre japonais). Aux habitués, il vend des bottes de shiso, . Étape suivante, Sandrine et Yannick Perez, qui vendent des fleurs de courgettes, de grands bouquets d’ail frais et d’autres fruits colorés. « Ils cultivent presque tout eux-mêmes et trouvent le reste (pêches, abricots…) chez d’autres producteurs du coin. D’ailleurs, Sandrine m’envoie souvent des photos sur Facebook pour que je choisisse ! » Des fruits et légumes, nous passons à la poissonnerie où Laura et Harry apostrophent Éric avec un « Oh, il est beau aujourd’hui,

tout prêt pour la photo ! » Son étal parle pour lui avec ses poissons et crustacés pêchés de la veille. En voyant les bars de ligne, Harry dit : « L’année dernière, je les achetais entiers. Mais comme c’est un poisson cher, je me suis mis au défi de cuisiner tous les morceaux : arêtes pour le bouillon, tête au barbecue, le ventre en tartare… Et on remet ça cette année ! » À la fromagerie, Harry et Laura aff rontent la foule pour faire le plein de tomme de chèvre avant de remettre le cap sur le Nord Pinus, QG

Some nights I dream of Lyon: in a daze I wander along the Renaissance city’s winding, cobbled streets, my nose twitching towards the tantalising smells wafting from the open kitchen windows of the bouchons, the traditional taverns or bistros. Nab a table in an authentic bouchon (you can identify them by the Gnafron puppet logo) and relish the world’s finest, rustic gastronomy, including dishes such as grattons (pork pieces seasoned with salt, pepper and vinegar) and quenelle (a dumpling filled with veal fat, minced fish or poultry). Most bouchon menus also feature salade Lyonnaise: a simple, sharp and creamy creation. If you’re making it at home, make sure you buy the finest lettuce leaves. And then, of course, there is the bacon and a hot poached egg – fork pricked, its warm, runny egg yolk coating the leaves. If, like the Lyonnais, you really love your pork, pimp the garnish with 100g of smoked bacon (rind removed, thinly sliced and baked at 170˚C for 12 minutes) or 50g of coarsely-chopped pork scratchings. Parfois, je rêve de Lyon. J’erre dans le labyrinthe de ruelles pavées datant de la Renaissance, alléché par les odeurs délicieuses émanant des fenêtres des bistrots de cette ville magnifique. Asseyez-vous à la table d’un authentique bouchon, reconnaissable à son logo Gnafron, et vous dégusterez la meilleure gastronomie rustique du monde, que ce soit des grattons (porc assaisonné de sel, poivre et vinaigre), des quenelles ou du jarret de veau. La plupart des menus proposent aussi la toute simple, crémeuse et goûteuse salade lyonnaise. Si vous en faites une, procurez-vous une excellente tête de salade. Il y a aussi le bacon et l’œuf poché chaud ; un coup de fourchette et le jaune onctueux nappe les feuilles de salade. Si, comme les Lyonnais, vous aimez le cochon, rehaussez la garniture avec ces deux extras : 100 g de bacon fumé, sans gras, coupé en tranches fines et passé 12 minutes au four à 170°C, ou 50 g de couenne de porc. Method: 1. Mix the mustard, vinegar and 5ml water. Whisk in the rapeseed oil in a steady, thin thread. Taste and season. Add the shallot and garlic 2. Over a high heat, bring the lardons and a litre of water to a boil for 10 seconds. Drain. Fry the lardons on high for 1 minute, reduce to medium and cook for 5 minutes, stirring occasionally. Drain.3. Poach the eggs. 4. In a large bowl dress the salad leaves with the dressing. Toss in the lardons, croutons and herbs. 5. Arrange the salad in four bowls, with a poached egg in each centre. Serve.

RECETTE : 1. Mélanger la moutarde, le vinaigre et 5 ml d’eau. Ajouter l’huile de colza en filet fin et régulier. Goûter et assaisonner. Ajouter l’échalote et l’ail. 2. À feu fort, porter à ébullition pendant 10 secondes les lardons dans 1 litre d’eau. Étuver. Faire frire les lardons à feu fort pendant 1 minute, réduire à feu moyen et laissez cuire pendant 5 minutes en remuant de temps en temps. Étuver. 3. Pocher les œufs. 4. When Netflix had to come up with a slick way to promote crime series Marseille this year, they headed straight for the soap dish. Part of the show’s promotion drive featured blocks of the coastal city’s famous Savon de Marseille, gushing a copious amount of blood, being posted off to a select few media movers and shakers. The clever campaign underlined the extent to which the humble soap has become a symbol of Marseille; a cultural icon locals feel hugely passionate about. In fact, Marseillais tend to work themselves into such a lather over the small blocks, it makes the messy Netflix promotion seem positively sedate. Take, for instance, the drive to protect the soap and its method of manufacture, spearheaded by Aurélien Sergent. Last November, the plucky 22-year-old local set up a petition that has so far garnered over 123,000 signatures, proof this is no piffling issue. This isn’t the first time Sergent has rallied his fellow Marseillais. Three years ago, he called on them to prevent

the closure of Le Fer à Cheval, one of the city’s oldest soapmakers. The petition was ultimately successful and persuaded parliament to protect Savon de Marseille by drawing up a framework for its designation and manufacture. The fine print’s now under discussion – hence Sergent and his supporters getting into a froth again, along with Marseille’s four remaining “traditional” soapmakers: Le Fer à Cheval, Marius Fabre, Le Sérail and La Savonnerie du Midi (see sidebar). Having adopted more modern techniques, however, major soapmakers such as L’Occitane en Provence have made their opposition clear. Relations between the two camps have become strained, with both seeking legal representation. As things stand, just getting your hands on bona fide Savon de Marseille is tricky. Astonishingly, 90 to 95 percent of soap marketed as being “from Marseille” is actually counterfeit. Whereas only vegetable oils should be used in the manufacture of Savon de Marseille, some 80

Cette promotion différente soulignait combien l’humble savon était devenu un symbole de Marseille, un emblème culturel dont les habitants sont fiers. En fait, les Marseillais jettent presque le bébé avec l’eau du bain quand il est question de savon. Le coup gore de Netfl ix en paraîtrait presque ennuyeux. Prenez, par exemple, la campagne lancée par Aurélien Sergent pour défendre l’authentique savon de Marseille et sa méthode de fabrication. En novembre dernier, ce jeune courageux de 22 ans a lancé une pétition qui a déjà recueilli plus de 123 000 signatures, signe que le combat est singulier… Et ce n’est pas la première fois. Il y a trois ans, Aurélien Sergent avait déjà mobilisé les Marseillais pour empêcher la fermeture du

Fer à cheval, l’une des plus anciennes savonneries de la ville. Cette pétition couronnée de succès avait abouti sur la création par le Parlement d’un cadre permettant, au même titre qu’une AOC, de protéger la désignation et la fabrication du précieux cube de savon. Cette longue procédure est sur le point d’aboutir, d’où l’urgence pour Aurélien Sergent et ses soutiens de faire valoir leur point de vue, proche de celui défendu par les quatre dernières savonneries traditionnelles : le Fer à cheval, donc, mais aussi Marius Fabre, Le Sérail et la Savonnerie du Midi (voir page suivante). Converties à des méthodes plus modernes, les grandes savonneries, comme L’Occitane en Provence, ont, du coup, haussé le ton. Entre les défenseurs de la ligne « pure » et les partisans de l’ouverture, les relations se sont quelque peu tendues, au point même qu’ils ont engagé des avocats. L’affaire, on le voit, est sérieuse, pas seulement, d’ailleurs, du côté du Vieux port… On l’ignore, en effet, mais 90 à 95 % des savons que l’on nous vend comme étant « de sont

percent of the fake soap from countres like China, Tunisia and Turkey is made from animal fat. Marseille’s emblematic soap was long made without any designated production method. It wasn’t until the founding of the city’s first soap factories in the Middle Ages that rules were laid down. Early producers harnessed Provence’s raw materials, making their product from olive oil and salt and soda ashes from the Camargue, while also leaving their factory windows open to allow the mistral (a strong, cold northwesterly wind) to dry it, a technique still used today. A 1688 edict regulated the manufacture of the soap, cementing the ties between it and Marseille. The rules, which stipulated the use of olive oil – giving the soap its green or brown hue – and a

cauldron for boiling the product, have changed little since then. Traditional soapmakers still employ the cauldron-based “Marseille process”, though their industrial counterparts have abandoned it. A complex technique, it requires knowhow passed down from generation to generation. The task of stirring the boiling soap mixture is not without its dangers; to protect workers from harm, old-style soap manufacturers still hang effigies of the Virgin Mary from the walls of their factories. In 1900, there were 100 master soapmakers in Marseille and 14 in Salon-de-Provence. Today, there are just four. Will they succeed in earning recognition for their much-valued know-how by the end of the summer? The fight over Marseille’s soap just might get dirty before then.

Principalement fabriqués en Chine, en Tunisie et en Turquie, ils sont, pour 80 % d’entre eux, constitués de graisses animales alors que seule l’huile végétale peut entrer dans la composition du célèbre et vénérable savon. Utilisé par les Phéniciens et les Gaulois, il a longtemps été produit sans charte de fabrication jusqu’à ce que les premières savonneries marseillaises fassent leur apparition. Ce sont elles qui, au Moyen Age, ont l’idée de recourir aux matières premières qu’offre la terre de Provence : l’huile d’olive, le sel et la soude de Camargue et même le Mistral qu’on utilisait — et utilise encore — pour faire sécher ce produit par les fenêtres ouvertes des savonneries. En 1688, l’Édit de Colbert acte l’alliance de Marseille et de son savon et réglemente sa fabrication. Ses règles, l’utilisation de l’huile d’olive

qui donne au savon une teinte verte ou brune, la proscription des graisses animales et la cuisson au chaudron, ont peu changé depuis. Pratiquée dans les savonneries artisanales, la cuisson au chaudron (marseillaise) a été abandonnée par les savonniers industriels. Délicate, elle exige, en effet, un savoir-faire qui s’acquiert au prix d’un long apprentissage et se transmet de génération en génération. Malaxer le savon alors qu’il bout à gros bouillons n’est pas sans danger. Dans les savonneries qui travaillent « à l’ancienne », on trouve toujours, accrochée à un mur, une effigie de la Vierge Marie censée protéger les ouvriers. En 1900, les maîtres savonniers étaient cent à Marseille, quatorze à Salon-de-Provence. Ils ne sont aujourd’hui plus que quatre. Arriveront-ils à faire reconnaître leur savoir ? Espérons que ce combat ne les oblige pas à se salir les mains.

GRABBING THE RHINO BY THE HORN The Zoological Society of London is aiming to take down the Illegal Wildlife Trade, a $10-billion industry preying upon the planet's most vulnerable species magine a world without elephants, rhinos or tigers. Most would agree that the loss of these majestic creatures would constitute a tragedy, yet it's humankind’s continuing demand for products derived from these creatures that is one of the forces pushing them towards the brink of extinction. To make matters worse, demand for these products is often based on ancient beliefs in their healing properties, which often have no modern scientific basis. Consider the pangolin; the same scales that give these creatures their unique appearance are also prized in the Far East for their perceived medicinal qualities, despite them consisting of the same keratin that makes up our own fingernails. Their meat is also prized as a delicacy, which has lead to pangolins becoming the most illegally traded mammals on the planet. So who is to blame? The mighty Illegal

Wildlife Trade (IWT), often linked to criminal gangs and terrorist groups, is currently estimated to be worth over $10 billion – a

figure that begins to make sense when you consider that rhino horn is now even more valuable by weight than gold.

The statistics across the world are horrifying: 10% of Africa’s entire elephant population was slaughtered for ivory between 2010-2012; 1,452 tigers were killed by poachers across the same period; 1,175 rhinos were lost in South Africa in 2015 alone; more than one million pangolins were snatched from the wild during the last ten years. Urgent action is clearly required, but it’s hard to know where to start against such a committed and insidious illegal trade. The Zoological Society of London (ZSL) is on the front line against the IWT, developing sophisticated remote monitoring technologies like Instant Detect, and working with both national policy makers and local enforcement agencies to bring about the end of a trade threatening to destroy some of the planet’s most cherished species. were delightfully silly, and inflected with a Jackass-like sense of anarchy. Daredevil Joë Hamman improvised many of his scenes, including an attack on a small steam train travelling in from Arles. The story goes that after leaping into a compartment, he threatened its occupants with a gun. An old woman – who assumed they were genuinely under attack – walloped the actor with her umbrella, a scene so true to life it made the final cut. This shambolic authenticity was one of the keys to the home-grown success of the 20 or so made-in-the-South-of-France westerns filmed between 1909 and 1913. Another was the fact that they depicted the Camargue as a land of freedom, a utopia beyond laws. The movies were a critical hit when released in the US by Gaumont. World War I, however, would call time on Hamman and de Baroncelli’s epic game of cowboys and Indians. In subsequent years, directors seemed more reluctant to get back into the French Western saddle, though a few cult films would revisit the Rhône delta. Among them was D’Où Viens-Tu Johnny (1963), an improbable vehicle for teen idol Johnny Hallyday, in which he horsed around with gardians before un-spontaneously breaking into hits like Pour moi la vie va commencer. The strange legacy of this Gallic genre

lives on with the Western Camarguais exhibition at this year’s Rencontres d’Arles – spanning archive posters, photos and movie screenings – and an eponymous book. Yet it’s perhaps best captured by Oaïstern, a Marsaillais collective (facebook.com/Oaistern/) who project Jean Durand’s original films, now over 100 years old, accompanied by a homespun soundtrack mixing djembe, harmonicas and DJ tracks. Held in unexpected places – a boules clubs, say, or the rooftop of the Cité Radieuse – the ciné-concerts have a wildly creative, chaotic streak that would make that old tearaway Joë Hamman proud. In 1905, Buffalo Bill’s Wild West show rolled into Paris, to a cheering crowd that included down-on-his-luck aristocrat and Camarguais bull owner Folco de Baroncelli. After the performance, he met Joë (born Jean) Hamman, a young Frenchman recruited by the show for his skills as a stuntman/horse rider, and knowledge of Sioux culture. Years later Hamman, now a silent-film actor, contacted de Baroncelli with a magnificently harebrained scheme: shooting Western-themed short films against Provence’s striking natural landscapes, using his gardians (leather chap-clad Camarguais herdsmen mounted on white steeds) as extras. It was a big gamble at a time when most movies were shot in a studio. However, the boulders of the Baux-de-Provence and the vast, empty landscapes around the village of Saintes-Maries-de-La-Mer proved surprisingly convincing stand-ins for the American frontier, especially with director Jean Durand behind the camera. To complete the illusion, they recruited Japanese students living in the area to play the roles of Indians, dressed in authentic paraphernalia brought from the US. With cryptic titles like Hanging in Jefferson City and The Railway of Death, these so-called bouillabaisse westerns

Pour compléter l’illusion, des étudiants japonais de la région jouèrent les Indiens, habillés avec des accessoires authentiques importés des États-Unis.

Avec des titres cryptiques tels que Pendaison à Jefferson City et Le Railway de la mort, ces « oaïsterns » étaient délicieusement kitsch, avec une anarchie potache. Cependant, la Première Guerre mondiale allait sonner le glas du jeu de cow-boys et d’Indiens de Hamman et

Baroncelli. Par la suite, les réalisateurs renâclèrent à remonter sur la selle camarguaise, même si quelques films cultes se déroulèrent à nouveau dans le delta du Rhône. Citons D’où viens-tu Johnny ? (1963), où l’idole des jeunes Johnny Hallyday chevauchait avec des gardians et chantait de manière empruntée des tubes tels que Pour moi la vie va commencer. Ce patrimoine étrange d’un genre français des débuts du cinéma revit avec l’exposition Western camarguais aux Rencontres d’Arles de cette année. Affiches de films, photos et livre éponyme recréent le tableau. Pourtant, les héritiers les plus fidèles sont sans doute Oaïstern, un collectif marseillais (facebook/Oaïstern/) qui projette les films de Jean Durand, désormais centenaires, sur une bande-son maison mêlant djembés, harmonicas et mixes de DJ. Les cinéconcerts, qui se déroulent dans des lieux inattendus — club de boules ou toit de la Cité Radieuse — ont un esprit débridé, et créatif dont Joë Hamman serait fier.

WHERE IT ALL FROM SKETCHES AND BLUEPRINTS TO 320KM/H As our brand new trains start to roll out across our routes, we take a look back at how the whole project began.

For the new Eurostar look, we worked with Pininfarina, the design house behind the distinctive look of Ferrari and Maserati. “Everything in the train answers to a functional demand,” says Fabio Filippini, Pininfarina’s Vice-President of Design, “but we try to answer it with the most elegant, simple and pure gesture.”

For example, we wanted to make sure that every traveller could enjoy a sense of personal space and comfort. The designers used colour to create a continuous flow through every coach, subtly alternating shades along each row of seats, so you’ll feel happily cocooned in your own personal space. And, as the world whizzes by, you can now stay connected with free onboard wi-fi, while the Eurostar app gives you

access to TV programmes, films, games and more. Plug points at every seat mean that your phone can stay charged all the way, too. “I’ve worked for Eurostar for 21 years now,” says Andrew Darbyshire, our Service Readiness Manager for the new fleet, “and it’s certainly the biggest part of its history since the launch. They’re the future of Eurostar: superb.” •

Alors que nos tout nouveaux trains commencent à circuler sur nos liaisons, revenons sur la genèse du projet. Pour offrir un nouveau look à Eurostar, nous avons travaillé avec Pininfarina, la maison de design à l’origine du célèbre style de Ferrari et Maserati. « Dans le train, tout répond à une demande fonctionnelle » déclare Fabio Filippini, vice-président chargé du design chez Pininfarina. « Mais nous essayons d’y répondre de la façon la plus pure, la plus simple et la plus élégante. » Par exemple, nous tenions à ce que chaque voyageur puisse avoir son espace personnel et un sentiment de confort. Pour y parvenir, les designers ont créé une continuité dans toutes les voitures avec la couleur, alternant subtilement les nuances le long de chaque rangée de sièges. Nu er steeds meer van onze nieuwe spiksplinternieuwe treinen op onze routes rijden, kijken we terug naar hoe het allemaal begon. Voor de nieuwe look van Eurostar hebben we samengewerkt met Pininfarina, ontwerpers van het beroemde design van Ferrari en Maserati. “Elk element in de trein beantwoordt aan een functionele vraag,” zegt Fabio Filippini, vicepresident voor design bij Pininfarina, “en wij doen dat op de meest eenvoudige, pure en elegante manier.” Zo wilden we dat elke reiziger het gevoel krijgt van persoonlijke ruimte en comfort. De ontwerpers gebruikten doorheen de rijtuigen een bepaalde kleur, met telkens subtiele nuances voor elke rij zitplaatsen. Als je plaatsneemt, zit je als het ware in je eigen persoonlijke cocon. Terwijl het landschap voorbijzoeft, kun je in de nieuwe treinen via de Eurostarapp verbinden met wifi in de trein voor een film, televisieprogramma’s of allerlei informatie.Zo wordt de reis nóg korter. Ook zijn er aan elke zitplaats stopcontacten om je smartphone of laptop op te laden. “Ik werk al 21 jaar voor Eurostar,” zegt Andrew Darbyshire, onze Service Readiness Manager voor de nieuwe treinen, “en dit is echt wel de grootste gebeurtenis voor Eurostar sinds de start. De nieuwe treinen zijn de toekomst van Eurostar: gewoonweg schitterend.” •

SUMMER EXHIBITION 2016 Like every annual Summer Exhibition since 1769, this must-see event showcases work in painting, sculpture, photography, printmaking, architecture and film. This year’s coordinator, Richard Wilson RA, explores the theme of artistic duos, and in the courtyard sits Spyre, a stunning bespoke installation by architect and sculptor Ron Arad RA. – Peinture, sculpture, photographie, gravure, architecture, film : comme chaque été depuis 1769, l’art contemporain s’exhibe sous toutes ses formes à la Royal Academy. TATE MODERN Trailblazing artist Georgia O’Keeffe made her debut a century ago this year. Since none of her works are on public display in the UK, this is a once-in-a-generation chance to see this artist’s skill outside the US, including the most expensive painting by a female artist ever sold at auction. – L’artiste avant-gardiste Georgia O’Keeffe a fait ses débuts il y a un siècle cette année. CHECKING IN FOR THALYS AND ICE TRAINS If you’re travelling to the Netherlands or Germany, mandatory security checks are now taking place for Thalys and ICE trains leaving Brussels-Midi/Zuid station. Your ticket, ID and luggage will be checked before you’re able to go to the platform. The Quick Connections exit on the Eurostar platform has also been closed – instead, you’ll need to take the main exit at the far end to go down to the main part of the station.

What to do When you get to the station, head straight to area near the Thalys information desk. You’ll find it on the right after the Eurostar check-in area and the SNCB ticket office. If you miss your connection, the SNCB ticket office team will be happy to help.

LILLE EUROPE If you’re travelling to destinations in France, you’ll change here. Your Eurostar train will arrive downstairs and the main station is upstairs.

When you arrive from the UK, go upstairs to the main station concourse, where you’ll find the departure boards. Look at the departure boards for your train number and time. Remember, your destination may not always be the train’s final stop, so be sure to double check. If you’re travelling to the UK, head h ad upstairs and follow the signss for Eurostar Departures.
