Featured Producer Frédéric & Daniel Brunier Southern Rhône Valley, France
Vignobles Brunier came to be by brothers Frédéric and Daniel Brunier, the fourth generation of their family to farm the land of Châteauneuf-du-Pape. The brothers have worked hard to solidify the legacy left by their father, Henri, and their grandfather, Hippolyte. They have brought their intricate knowledge of the various terroirs of the Southern Rhône to new heights through the expansion of their holdings. Their properties represent a vast variation of soil types, climatic conditions, and grape varietals. Domaine Les Pallières is undeniably one of the greatest, longest-running properties of the Southern Rhône—outside the village of Gigondas, woven into the foothills of the beautiful and brooding Dentelles de Montmirail. The many lieux-dits, once blended into one cuvée of Gigondas, have been separated into Cuvée “Terrasse du Diable,” and Cuvée “Les Racines” One cannot think of Châteauneuf-du-Pape, the most celebrated cru of the Southern Rhône, without thinking of Domaine du Vieux Télégraphe. The Brunier family is legendary in its own right, having been rooted to the enigmatic plateau known as “La Crau” for over one hundred years. The wines of Vieux Télégraphe evoke the concept of terroir in its purest form: they reflect their dramatic climate, the rough terrain that defines the soil, their full sun exposure at a higher altitude, the typicity of the varietals with an emphasis on Grenache, and of course, the influence of their caretakers, the Brunier family. For many, La Crau is Châteauneuf-du-Pape’s grandest cru. THE WINES

White Wines Chardonnay FRANCE Burgundy Chablis
The crisp and mineral side of Chardonnay, with a tart and steely character. In its youth, aromas of seaspray, oyster shells, nuts, lemon custard, and mushrooms are profound. As the wines develop with age, butter, honey, and oozing cheese aromas are intensified. Flavors of tart green apple, and lemon with razor-like texture and acidity. Soil type: Kimmeridgian marl, Clay/Limestone

MEURSAULT The soil in Meursault benefits from an extremely low water table, forcing its vines to drive its roots deep into the ground in search of water. This gives the vines access to mineral deposits rich in iron and magnesium that translate into the wines. Coche-Dury and Roulot are the most highly-regarded domaines. Soil type: Limestone, Oolitic ironstone, flinty clay, marl and calcareous topsoils

PULIGNY-MONTRACHET The village of Puligny is considered to be the ideal terroir for Chardonnay. With 4 Grand Crus and many Premier Crus surrounding them, Puligny is home to some of the most sacred vineyard ground in all of France, and possibly the world. These wines are generally on the riper side of Chardonnay, and can age gracefully. Look to Etienne Sauzet, Paul Pernot, and Domaine Leflaive for premier examples. CHASSAGNE-MONTRACHET The white wines of Chassagne-Montrachet have power, and a round, creamy mouthfeel that is seductive. The wines are more floral than the wines found in Puligny, with slightly more use of new French oak during élevage. Top-tier producers include Ramonet, Marc Colin and the rising star, Bernard Moreau. Jura
The forests and mountains of the Jura lie just alongside the border of Switzerland and provide isolation from the rest of France’s wine growing regions and styles. Many old traditions are still practiced today, and the wines can be very unique, sometimes showing a natural oxidation as a result of extensive barrel aging. Soil type: Limestone, marl, clay

The climate in Oregon’s Willamette Valley closely mimics the cool climate of Burgundy and thus produces wines in a similar style. The soils in Oregon are slightly richer, with more clay and volcanic bedrock that produce delicate and textural wines with crisp acidity. WILLAMETTE VALLEY Soil type: Clay loams over volcanic bedrock

Sauvignon Blanc FRANCE Loire Valley
Some of the world’s most mineral wines from various soils loaded with limestone and silex. The wines are flinty and highly perfumed with musky aromas of flowers, tart green apples, gooseberry, and a distinctive herbaceous quality reminiscent of fresh-cut grass. The palate delivers fresh grapefruit zest, and high-pitched citrus flavors. This is terroir at its finest. Here are a few of the most consistent producers: Bin No. Bottle SANCERRE Soil type: Limestone, Chalk-tuffeau, Kimmeridgian marl, flinty pebbles (caillottes)

Chenin Blanc FRANCE Loire Valley
These wines are produced in both dry and off-dry styles, and benefit from high mineral content in the tuffeau soils from which the vines grow. Tart tree fruit, lemon, chamomile, and ginger dominate the nose and palate. The more oxidative versions found in Savennières and Vouvray can give off aromas of hay, lanolin, pistachios, and bruised apples. All of the wines have crisp and piercing acidity, and can be great matches with our menu. Bin No. Bottle ANJOU-SAUMUR Soil type: Chalk-tuffeau, schist, clay

Riesling FRANCE
Bin No. Bottle ALSACE Alsace is the only region in France known for its Riesling. It produces a rich and powerful style that is classically fermented dry, but many versions of off-dry and sweet Rieslings can also be found. These wines are known less for their citrus character and more for their floral aromatics and steeliness. Soil type: Various fertile soils over schist, volcanic sedimentary rock, granite, clay, sandstone & limestone marl

GERMANY
MOSEL Wines from the Mosel are some of the most transparent wines in the world. The wines are the lightest and most citrus-driven Rieslings in all of Germany, producing light-bodied, high-acid, low-alcohol wines that are incredibly compatible with food. The climate in the Mosel is marginal and grapes struggle to ripen. Steep vineyard slopes create quick drainage, so vines must penetrate the slate beneath them to access water deep below the surface. It is for this reason that Mosel Riesling is some of the most mineral-driven wine on earth. Soil type: Devonian blue and red slate

RHEINGAU A slightly warmer climate enables riper grapes and more tropical flavors in these wines, with more roundness and body than those in the Mosel. Slightly different soils and exposure to the sun give these wines their unique character. Flavors of quince, melon, and honeysuckle are common in Rheingau riesling. CHAMBOLLE-MUSIGNY Many people believe that Chambolle-Musigny produces the world’s ideal expression of Pinot Noir. It has richness and finesse, yet still retains an underlying power and firmness. Oregon
The climate in Oregon’s Willamette Valley closely mimics the cool climate of Burgundy and thus produces wines in a very similar style. Many Burgundian families have begun making wine here as a result. The soils in Oregon are slightly richer, with clay and volcanic bedrock as opposed to Burgundy’s ‘calcaire’ that produce delicate and textural wines with crisp acidity and elegance. WILLAMETTE VALLEY Soil type: Clay loams over volcanic bedrock, “Jory”

Tempranillo SPAIN
RIOJA The most famous red wines of Spain come from Rioja. These wines age gracefully and can develop intriguing aromas of sweet red cherry, vanilla, cinnamon, cedar and cigar tobacco. Rioja produces medium-bodied red wines with sweet and sour red cherry flavors and gripping tannins that come from extended aging in traditional American oak barrels.

Sangiovese ITALY Tuscany
The wines of Tuscany have seen a rush of development over the last few decades, and the Chiantis and Brunellos of the modern era are powerful and assertive. However, the producers below represent the old-world traditionalist methods of production that remain elegant and are true representations of the region. The ‘galestro’ soils in Tuscany give these wines a unique earthiness. Sangiovese is a medium-bodied red wine that has characteristics of tart red cherry, with underlying aromas of vanilla, leather and dried herbs. Bin No. CHIANTI

Grenache / Rhône blends FRANCE Southern Rhône
The brut strength of the Rhône Valley can be found in the villages of Châteauneuf-du-Pape and Gigondas. These villages are some of the warmest sun-baked climates in France, and heat is stored in rocks that cover the vineyards, called ‘galets’. Typically, wines are Grenache-based, with Syrah, Mourvèdre & other grapes blended in. Bin No. Bottle CHÂTEAUNEUF-DU-PAPE Soil type: ‘Galets roulés’ stone-marl
